Tasty & Nutritious Muesli Bars

These muesli bars are a family fave in my house.

Not only do muesli bars taste amazing they can be close to waste free. Utilise bulk food stores for your dry ingredients and you are really only left with a tiny amount of waste. No matter what you do you will be sure to create less waste than the individual wrapped muesli bars from the supermarket. Added bonus you know exactly what's going into them.


2.5 cups rolled oats

3/4 cup coconut

1/2 cup choc bits

1/2 cup diced dried apricots

1/2 cup sultanas

1/4 cup pumpkin kernels

2/3 cup brown sugar

2/3 cup wholemeal plain flour

1/2 tsp baking powder

1/2 cup coconut oil

1/3 cup milk

1 egg (fresh from the backyard chooks)


  1. Preheat oven to 180 d C
  2. Combine Dry ingredients in large bowl
  3. Whisk wet ingredients in separate bowl
  4. Add wet ingredients into dry and combine well
  5. Line Lamington Tin with baking paper Press mix into tin
  6. Sprinkle with more pumpkin kernels if you love them
  7. Bake in oven for 20 minutes
  8. Allow to cool in tin Remove and cut into bars or squares
